
One of the most delightfully delicate treats is called lavender honey. This is an herbal honey infusion that is both culinary and medicinal, so you’re going to want to drizzle it over everything. Of course it’s amazing on buttered sourdough, but I’d try it over ice cream and whipped if you want something more texturally adventurous.

Culinary and medicinal benefits of lavender honey
Honey is an incredible substance widely known for its anti-inflammatory, antiviral, and immune boosting properties (among other things!). Honey is also a preservative used for millennia. It holds the flavor and herbal benefits of lavender without requiring refrigeration or other preserving techniques. In addition to its delicious floral scent and flavor, lavender aids relaxation and stress relief, improves sleep and digestion in addition to its anti-inflammatory properties.
All of these benefits come together in this herbal honey that can be applied topically or internally. For best results, prevent the honey from getting too warm as heat will kill off much of the beneficial nutrients.
Two simple ingredients for lavender honey
Lavender
You want to use a very high-quality culinary lavender for this recipe so that your lavender honey has as much flavor and herbal benefits as possible. I buy mine from Mountain Rose Herbs and love it!
Honey
Always use organic, raw, unfiltered honey for herbal honey infusions (bonus points for a local source!).

Herbal and Floral Lavender Honey
Ingredients
- Culinary Lavender
- Raw unfiltered honey
Instructions
- Fill a glass jar of your choice about 1/4 full of lavender
- Cover the lavender with honey
- Stir until everything in incorporated and there are no air pockets
- Sit for 2-4 weeks in a cool dark place
- After a few weeks I start to check the flavor of the honey
- Once the honey reaches my desired flavor, strain it into another jar and cover
- I like to reserve the lavender for steeping in tea or moon milk but you definitely don’t want to throw it away. The flowers still have a lot to give.

How to use your lavender honey
- Whip it and drizzle over toast
- Pour over ice cream
- Add to herbal teas or moon milk (just make sure the liquid isn’t too hot)
- Add to tallow balm for a lavender scent and skin benefits
- Take a spoonful before bed for sweet dreams
