Fill a glass jar of your choice about 1/4 full of lavender
Cover the lavender with honey
Stir until everything in incorporated and there are no air pockets
Sit for 2-4 weeks in a cool dark place
After a few weeks I start to check the flavor of the honey
Once the honey reaches my desired flavor, strain it into another jar and cover
I like to reserve the lavender for steeping in tea or moon milk but you definitely don’t want to throw it away. The flowers still have a lot to give.
