Easy Sourdough Granola Made from Pantry Staples

Granola is one of the simplest snacks to make at home and the result is so delicious and satisfying. When you look at the yucky ingredients in store-bought granola, or need to sell an organ to afford the “clean” kind every week, you might be convinced to make it from home. I’ve made granola from scratch for years and love that you can add whatever nuts and seeds you might have on hand to customize it. I recently started adding sourdough starter to my granola and love the flavor and crunch it brings! Served over yogurt or a smoothie bowl, sourdough granola makes a great snack or breakfast. 

Can I make this recipe without sourdough starter?

Yes! Omit the starter and use one less cup of oats.

Do I need active or discard sourdough starter?

You can use either for this recipe. Using sourdough starter contributes to the flavor and gut healing properties of the granola. I don’t notice the flavor being very sour when I add the 1/2 cup of starter to make sourdough granola, but if you used very inactive starter, it could get a little bit tangy.

  • Large, rimmed baking sheet 
  • Unbleached baking paper
  • Large bowl for mixing

Granola ingredients

My favorite things to add to granola are

  • Nuts: walnuts, almonds, pecans, peanuts, cashews
  • Seeds: chia, sesame, pumpkin, flax, sunflower
  • Dried fruit: craisins, raisins, blueberries, figs, dates

Optional add-ins

  • Protein powder: this one is my favorite
  • Collagen powder: love this one

How to follow this recipe

I designed this recipe to be more like guidelines for sourdough granola. I want you to be able to throw any combination of nuts, seeds, or dried fruit into this granola recipe on a dime! This is also a great way to clear out the panty of odds and ends before you restock. Please use this recipe as a guide to inspire creative and spontaneous granola making and let me know if you have any questions in the comments.

Sourdough Granola

Servings 2 1 quart jars

Ingredients

  • 2-3 egg whites ues ¼ cup of coconut oil for egg free
  • 2 TBSP brown sugar
  • ¼ cup honey or maple syrup
  • ½ cup sourdough starter active or discard
  • Zest of one orange or lemon, or grapefruit
  • 3 cups old fashioned oats
  • 1 cup chopped raw nuts I used walnuts and almonds in the pictured granola
  • ¼ cup of seeds of your choice I used pumpkin and chia in the pictured granola
  • 1 cup dried fruit I used cranberries and blueberries in the pictured granola
  • Handful of coconut chips

OPTIONAL ADD-INS: a few scoops of plain protein powder, seasonings like cinnamon, vanilla, etc. 

Instructions

  • Preheat oven to 350 degrees F
  • Line a large, rimmed baking sheet with parchment paper
  • Mix all of the wet ingredients and zest in a large bowl. Be sure to add any protein powder or seasonings if applicable
  • Add the dry ingredients but not the dried fruit or coconut chips (reserve these for later)
  • Mix everything together well until the dry ingredients are well coated
  • Distribute evenly on the baking sheet and bake for 15 minutes
  • After 15 minutes, pull out and stir the ingredients, adding the dried fruit
  • Return to the oven for 15 more minutes
  • Pull out one more time and sprinkle the coconut chips on top
  • Bake for 5 more minutes
