Of course you can buy things like bread crumbs or croutons from the store, but why would you when you have all the ingredients to make delicious ones at home? Enter the sourdough breadcrumb, potentially the easiest of the leftover bread recipes. All it takes is toasting some bread and processing it down into crumbs! These breadcrumbs are so simple to make and I find that they really elevate my homemade meatballs and make a delicious topping for baked mac and cheese. What kind of bread should I use for this recipe?
You can use any leftover bread for sourdough breadcrumbs. I prefer to use something crusty like my organic sourdough loaf, but I have made breadcrumbs from dinner rolls, pitas, and more
Does my bread need to be fresh?
No! I frequently use bread stored in the freezer. I put it directly from the freezer to the oven to make sourdough breadcrumbs and it works perfectly!
How to store sourdough breadcrumbs?
I store my breadcrumbs in a jar in the freezer so they don’t go rancid. You can also use a freezer bag.
Tips for making the best sourdough breadcrumbs
- Make sure everything is really dry when you process the breadcrumbs
- Any moisture will prevent the crumbs from forming, so be careful!
- Use crusty pieces of bread for lots of crunch
- Feel free to add herbs, garlic pieces and other seasonings to the food processor when you blitz up the breadcrumbs for lots of flavor.

Instructions
- Using your oven or toaster oven, toast sourdough until it is completely dried out. I usually do this in a 350 degree F oven for 20-30 minutes, occasionally checking to see if it is completely dried out.
- When your bread is completely dried out, add it in chunks to a food processor. Make sure the food processor and the bread are completely dried out by breaking the pieces in half and checking for moisture
- Blitz bread in the food processor until small crumbs are formed. The breadcrumbs do not need to all be the same size, but you can blitz until they are uniform.
- Store in the freezer until ready to use.
