
Egg yolks are one of the most bioavailable forms of vitamin A available to us. Because of how nutrient-dense and protein-packed they are, I try to get egg yolks in my diet multiple times a day. I don’t always love eating a fried egg, so when I saw Noelle Kovary make coffee with egg yolk, I knew I had to try it! Of course, I had quite a few questions when I first saw this idea: what does it taste like? Why would I make it? How do I avoid drinking scrambled eggs in my coffee?

Why add egg yolks to your coffee?
When I realized that eggs are one of the easiest superfoods to get my hands on, I started experimenting with different ways to incorporate them into my diet. In addition to their bioavailable retinol (vitamin A), eggs are a great source of protein, minerals, and choline. I love to have a hard-boiled egg as a snack, or a fried egg on a nice piece of sourdough toast, but adding a yolk to my coffee is a unique way to get all those nutrients in without actually eating a cooked egg.
Coffee and your metabolism
Coffee is a great metabolism booster. In fact, coffee can be really metabolically beneficial when consumed correctly. When consumed on an empty stomach, however, coffee can seriously spike your cortisol levels which can cause weight gain, high blood pressure, fatigue, and much more. Because of this, adding a fat and protein (like egg yolk) to your coffee, balances the drink and helps prevent this cortisol spike.
What does coffee with egg yolk taste like?
The drink can taste more or less eggy depending on what other flavors you add! When you whip it really well, coffee with egg yolk tastes creamy and delicious. I also like to add flavors like vanilla and cinnamon to make a more luxurious drink.
Supplies
- Waterproof electric whisk – this is the one I use and absolutely love!
- Coffee maker – I usually do fresh press or espresso
- Mug

- Coffee
- Eggs
- Sugar or sweetener of choice
- Flavor (optional): vanilla, cinnamon, nutmeg, cardamom, cocoa powder




How to make coffee with egg yolk
The secret to making a delicious yolky coffee is whipping it really well. Now this depends on how sweet you like your coffee. I like two spoonfuls of sugar in mine, but you can do as much or as little as you like. Whipping the yolk with a sweetener is how you protect the egg from cooking when you add the hot coffee later. I usually like to use cane sugar, but I have also tried this with maple syrup and coconut sugar with good results. I whip everything well until the mixture is light in color and fluffy (see pictures above for what this should look like!). After this is done do I add hot coffee and stir to combine.
Is it okay to eat raw eggs?
I don’t have any problem with eating raw eggs sourced from local, pastured chickens. I usually get mine from friends and family with free range chickens nearby. Remember to clean your egg shells because that is where salmonella can live. If you have clean shells, you have clean eggs so there’s no need to be afraid of raw eggs when taking these precautions. But, as always, do your own research and see what you are comfortable with!
What kind of coffee is best for this recipe?
Any hot, strong coffee works well, but my best results are from using a shot or two of espresso.
What to do with extra egg whites
When I’m making coffee with egg yolk a lot, I end up with a ton of egg whites in my fridge. Usually, I toss these into a batch of sourdough granola or collagen marshmallows, but you can also use them in a DIY hair mask with honey.

Coffee with Egg Yolk
Ingredients
- sugar to taste
- strong coffee to taste
- steamed milk or half and half to taste
Instructions
- Add one egg yolk to the mug you want to drink your coffee in
- Add sugar to taste depending on how sweet you prefer your coffee. I like two spoonfuls
- Using an electric whisk, whip the yolk and sugar together until light, fluffy, and a very light yellow color-this usually takes about 2 minutes
- Slowly pour hot coffee over the mixture while stirring
- Top with steamed milk or half and half!
Recipe Variations
- Flavor your drink with: vanilla, cinnamon, or nutmeg
- Make a mocha by adding some cocoa powder right before you finish whipping the yolk
- Boost the health benefits by adding a scoop of collagen powder right before you finish whipping the yolk
- Instead of using raw organic cane sugar, whip the yolk with maple syrup or brown sugar syrup
